Classic Greek Salad - “Horiatiki”

Ingredients:

  • 2 large tomatoes, chopped

  • 1 cucumber, sliced

  • 1/2 red onion, thinly sliced

  • 1 green bell pepper, sliced

  • 100g (3.5 oz) feta cheese, in a block

  • 10-12 Kalamata olives

  • 3 tbsp Agrolio Organic Olive Oil

  • 1 tbsp red wine vinegar

  • 1 tsp dried oregano

  • Salt & black pepper to taste

Instructions:

  1. In a bowl, combine the chopped tomatoes, cucumber, onion, and green bell pepper.

  2. Place the block of feta cheese on top.

  3. Add olives and sprinkle with oregano.

  4. Drizzle with Agrolio Olive Oil and vinegar. Season with salt and pepper.

  5. Serve immediately with fresh bread.

Greek Lemon & Olive Oil Roasted Potatoes

Ingredients:

  • 4 large potatoes, cut into wedges

  • 1/4 cup Agrolio Organic Olive Oil

  • Juice of 1 lemon

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • Salt & black pepper to taste

Instructions:

  1. Preheat oven to 200°C (400°F).

  2. Toss potatoes with Agrolio Olive Oil, lemon juice, garlic, oregano, salt, and pepper.

  3. Spread on a baking tray and roast for 40-45 minutes, flipping halfway.

  4. Serve hot with extra olive oil drizzled on top.

Mediterranean Grilled Fish with Olive Oil & Herbs

Ingredients:

  • 2 fillets of white fish (e.g., sea bass, cod)

  • 3 tbsp Agrolio Organic Olive Oil

  • Juice of 1 lemon

  • 1 garlic clove, minced

  • 1 tsp dried thyme

  • 1/2 tsp sea salt

  • Black pepper to taste

Instructions:

  1. Preheat grill or pan over medium-high heat.

  2. In a small bowl, mix Agrolio Olive Oil, lemon juice, garlic, thyme, salt, and pepper.

  3. Brush the mixture onto both sides of the fish.

  4. Grill for 4-5 minutes per side, or until the fish is flaky.

  5. Drizzle with extra olive oil before serving.
